Decided to mix things up and do a recipe. This is one I’ve made forever and I’m not 100% positive where I picked it up. It is always a crowd pleaser for brunch or breakfast. Special thank you to Dawnland Mama for the farm fresh duck eggs (even though she is a vegan herself).

Used whole grain bread and added bacon… I will now have to make this the rest of my life.
So good right?? I think the chives are the most important part.
We didn’t have any chives so I used green onions, (and like, twice as much cheese!) still so good!

Those are not bread crumbs, they are pieces of bread, or raw croutons. Regardless, it looks delicious and I look forward to trying it.
Is it the size that is the difference? Would they be breadcrumbs if I put them in the food processor? Thanks!
If you toasted them and put them in the food processor…but that wouldn’t taste as good.
Can I use any other substitute for the chives?
Scallions maybe. Any fresh herb you like would probably work too.
Try garlic chives…gives it that elusive crab rangoon flavor!

For people who don’t know what half and half is;
half milk / half cream.
Ahhhhh that hadn’t occurred to me. What do they call half and half down under? You can use straight up cream for this recipe too. Thanks!
I’m from the states but moved to China in 2003 and Thailand in 2004…where I am now.
Nine years here in S.E. Asia and have yet to see Half n’ Half here…anywhere. Some recommend adding heavy cream to milk….1/1 ratio, but literally nobody here has ever heard of half n’ half…except for some of us ex-patriots…
if eggs weren’t an option, what would you use? im not a vegan but i cannot stand eggs….
You could use a mixture of silken tofu, flour, and herbs as a substitute. I would google “souffle without eggs” and see what you can find.

Funny you mention it. I reheated this when my parents came over. 250 Fahrenheit for 15 minutes should do the trick. Same pan, uncovered.

I’ve heard people say they cannot distinguish between duck or goose eggs and regular chicken eggs….
Well, beat me down with a spoon. I sure as heck can tell the difference! Not sure though what it would be like in a recipe such as this, but while I used to raise ducks and geese, I only used their eggs for baking cookies, etc. Too rubbery and strong tasting for a regular breakfast meal, IMHO….
I really couldn’t tell any difference between these and farm fresh chicken eggs. I have never met an egg I didn’t like.
Bacon. I would also suggest dill, which I have always found to go really well with eggs. And maybe some onions and garlic. Can’t wait to try it, though, thanks for this!

Very good! I added diced, smoked ham and used fresh sourdough bread… I agree, the herbs/chives take it over the edge!
I’ve never been a fan of eggs unless scrambled, I know I know, for shame. You say don’t break yolks. Ok to do so for me as someone that loves scrambled?
You could definitely do that, but it would be more of a bread fritatta then.
I’m well known for my inability to cook beyond boiling water, however I decided to attempt this for Father’s Day breakfast this morning, as it seemed pretty hard to mess up. It was a huge hit with my husband, who was super impressed I tackled something with this many ingredients. Will definitely do again, next time with bacon as others have suggested! Thanks for sharing
So my dad wanted breakfast for dinner on father’s day, so I made him this and added this really good ground breakfast sausage with sage. I also found out that I surprisingly like duck eggs, and my dad really enjoyed it! Thanks for this awesome recipe!

In this instance I used a Cheddar/Monterrey Jack blend I had in the fridge. If I had my druthers it would be straight up Extra Extra Sharp Cheddar.
I used an aged extra sharp cheddar mixed with parmesan and it was perfect!
I am eating this right now, and I wish I never found this recipe! How am I not going to eat this every day? And the aroma!

I’m trying this with the chorizo right now. It’s in the oven anyway. I like this so much better than regular Scottish Farmhouse eggs. The original recipe has way too many steps, no butter, and the skillet makes it feel more like the rustic breakfast that it is than a glass dish.
My wife doesn’t like eggs plain, but loves when I make eggs/chorizo/cheese breakfast burritos, so hopefully she will approve!

Definately go with the bacon – use chirizo for Eggs ole!

Smoked salmon would be outrageous in this dish. In fact anything you would use in a fritatta would work. But the whole eggs and bread would make it so decadent. Thanks for the recipe.
